These are the knives you set out when the table deserves a second look. Goyon-Chazeau has been forging Laguiole knives in France for generations, and this set of six arrives in a French oak gift box that makes presentation effortless — whether you’re hosting a dinner or handing something over as a gift. The handles are sustainably sourced cow horn, hand-cut and finished, so each knife carries its own grain and color variation, making the set feel collected rather than mass-produced.

The construction behind them is worth understanding. Each knife is hand-forged from a solid 13 mm stainless steel rod — the steel runs the full length of the knife, not just the blade — and the bolsters are drop-hammered for strength that holds up through years of regular use. The serrated blades keep their edge without much maintenance, and the horn handles are riveted directly into that single-piece steel spine. The result is a knife that feels substantial in the hand and looks composed on the table. Note that because each handle is hand-finished, size, grain and color will vary across the set.

Best For

  • Setting a dinner table for six where the flatware will actually be noticed and remarked upon
  • Giving as a host or hostess gift that arrives in its own presentable box, no wrapping required
  • Replacing a mismatched knife set with something that holds up through years of frequent entertaining
  • Gifting to someone who pays attention to where things are made and what they’re made from

Laguiole Knife Construction Diagram

  • French Laguiole knives and utensils are famous for their beauty and strength - but all Laguiole utensils are the same. In fact, not all Laguiole products are made in France!
  • The strongest utensils are fully forged, with bolsters that are drop-hammered and shaped when the metal is over 1000C. These utensils start with a single rod of stainless steel, and end with a full metal tang and single piece of matal from blade to handle. Bolsters are critcally important as the point of balance and protection for fingers as they push against the utensil.
  • Laser and die-cut utensils are offered with and without bolsters. When offered, the bolsters are welded or attached with plastic construction. These utensils are more inexpensive than fully-forged utensils and can range in price and quality.
  • Goyon Chazeau knives and utensils are fully-forged, providing the highest level of strength and durability.
  • Forged, not stamped: Most production knives are laser- or die-cut from a flat steel plate. These start as a solid 13 mm stainless steel rod, with the blade, bolsters and tang shaped from one continuous piece of metal. There are no joints or welds that can loosen with repeated use.
  • X46CR13 stainless steel: A corrosion-resistant alloy used in high-end European cutlery that takes a polished finish and holds a working edge through regular use at the table.
  • No two handles look the same: Each handle is hand-cut from sustainably sourced cow horn, so the color, grain and translucency vary across the set. The knives coordinate but are not identical — a detail that reads as intentional rather than mass-produced.
  • Serrated blades cut through seared and charred meat cleanly with less tearing than a straight edge, and serrated edges require less frequent maintenance than straight-ground blades.
  • Arrives in a French oak gift box, presentation-ready with no additional wrapping needed.
  • Backed by a lifetime manufacturer’s warranty from Goyon-Chazeau.
  • Hand-wash only with mild soap and warm water — not dishwasher safe.

What These Specs Mean

  • X46CR13 Stainless-Steel: A high-carbon, chromium stainless steel alloy used in professional cutlery; it holds a sharp edge longer than standard stainless steel and resists corrosion, so the blades stay sharp and presentable through years of regular use.

Can these steak knives go in the dishwasher?

A: No — these must be hand-washed with mild soap and warm water. The cow horn handles are a natural material that will crack, warp or discolor with repeated dishwasher exposure. Keeping them out of the dishwasher is also the single best thing you can do to protect the finish on the polished stainless bolsters and blade.

What makes these “fully forged” knives different from most steak knives sold today?

A: Most steak knives — including many that look similar — are cut or stamped from a flat sheet of stainless steel. These Goyon-Chazeau knives are hand-forged from solid 13 mm stainless steel rods, meaning the steel runs as one continuous piece from blade tip through the full spine of the handle. The bolsters are drop-hammered rather than welded or glued on, which makes the junction between blade and handle significantly stronger over time. It’s a construction method that’s genuinely rare at any price point.

Will all six knives look the same, or will the horn handles vary?

A: They will vary. Each handle is cut from real sustainably sourced cow horn, so the color, grain pattern and slight surface variations are unique to every piece. The set will have a cohesive warm, tortoise-shell tone overall, but no two handles will be identical — which is part of what makes them look considered rather than mass-produced on a table.

Does this set come ready to give as a gift, or does it need separate packaging?

A: It ships in a French oak gift box that holds all six knives in fitted slots. The box has a brass latch and a Goyon-Chazeau branded insert inside the lid. No additional wrapping or presentation box is needed — it’s ready to give as-is.

What exactly is covered under the lifetime warranty?

A: The set carries a lifetime manufacturer’s warranty from Laguiole Goyon-Chazeau. Because each knife is fully forged as a single piece of steel with riveted handles, the construction is designed to hold up for decades of regular use. Natural variation in the horn handles — slight color shifts or surface character that develops with age — is expected and not a defect.

How long is each knife, and will it feel substantial in hand?

A: Each knife measures 9 inches long with a blade-to-handle profile of 3/4” deep and 1/2” tall — a slim, elegant form that still carries real weight thanks to the fully forged steel construction. The full set with box weighs 2.5 lbs total. The balance is toward the blade, which is typical of a well-forged knife and makes it feel controlled rather than handle-heavy when cutting.

After an arduous searching these steak knives are exactly what we were looking for. We purchased three different sets of steak knives previously and returned them. These steak knives are not serrated so they will not tear the meat. The horn handles and full tang knives have a perfect heft and quality feel.
