When a collection starts measuring in the hundreds, a kitchen cooler stops being a solution. The Transtherm Ermitage Solid Door Black is a 215-bottle freestanding cellar made in France by Eurocave, built for collectors who need true long-term storage conditions — not just chilling. A single temperature zone holds steady between 43 and 64°F with no more than a 2–3°F variation, and the thermal pump actively manages humidity between 55% and 80% RH. What sets it apart from most cabinets at this size is the integrated heating element, which means it can operate in unconditioned spaces — a garage, a basement, a second home — across an ambient range of 32 to 95°F without compromising the interior environment.

The interior has been updated with aluminum lining and adjustable rolling shelves with low-profile grooves that accommodate Burgundy, Bordeaux and oversize bottles without rearranging your system. Three fixed storage shelves stack up to 77 bottles each; three rolling shelves pull out for access without disturbing the rest of the rack. The compressor runs at 37 dBA and is mechanically isolated from the cabinet body, which matters if this is going into a dining room or a finished basement where noise and vibration can affect both your wine and your patience. A dedicated 15-amp circuit is required.

Best For

  • Storing a 100–200+ bottle collection of age-worthy Bordeaux or Burgundy that needs stable temperature and humidity over years, not weeks
  • Placement in a garage, unconditioned basement or second home where ambient temperatures swing seasonally
  • Collectors expanding from a single cooler who want a long-term storage solution without building a dedicated cellar
  • A dining room or finished basement installation where low noise and a clean exterior profile are non-negotiable
  • Temperature stability within ±2‑3°F: The electronic regulation system holds the interior set point within a narrow band regardless of ambient swings. For wine held over multi-year periods, this precision matters as much as the target temperature itself.
  • Compressor physically decoupled from the cabinet body: Slow, balanced compressors are mechanically disassociated from the cabinet structure so vibrations do not transfer to bottles — a meaningful consideration for long-term aging of Bordeaux or Burgundy.
  • Thermal pump humidity recycling (Transtherm exclusive): Rather than simply venting condensation, the system recycles it to sustain 55%‑80% RH. This goes beyond what the description covers — in very dry installations the system allows you to add water directly to raise humidity.
  • Rated at 37 dBA — comparable to a quiet library — making placement in a dining room or main living area practical without audible intrusion.
  • Aluminum interior lining: The inner material has been updated from thermoformed polystyrene to aluminum, improving durability and simplifying cleaning over the life of the unit.
  • 4.5 cm high‑density expanded foam insulation: Thicker insulation reduces the thermal load on the compressor and contributes to both temperature stability and long‑term energy efficiency.
  • Natural ventilation design reduces the risk of mold and off‑odors building up inside the cabinet over time.
  • Integrated lighting operates in multiple modes; alarms cover both temperature and humidity excursions so deviations are caught early.
  • Rolling shelves use low‑profile grooves that seat Bordeaux, Burgundy and Champagne bottle formats without modification — no adapter inserts required.
  • Made in France by Eurocave.

Is the Transtherm Ermitage #7708 built-in or freestanding?

A: This is a freestanding cabinet only. It requires 3 inches of clearance behind the unit and 2 inches on the sides and above for proper ventilation. It cannot be recessed into cabinetry or used in an undercounter application. If you're planning a dining room or kitchen remodel with a flush-fit installation, you'll need to look at a cabinet specifically rated for built-in use.

How loud does it run — is it quiet enough for a dining room or living space?

A: The Ermitage #7708 is rated at 37 dBA, which is roughly equivalent to a quiet library. The compressor is mechanically isolated from the cabinet body to eliminate vibration noise and hum. For most dining rooms and finished living spaces, you won't notice it running. The vibration isolation also matters for your wine: slow, balanced compressors prevent the micro-agitation that can disturb long-term aging bottles.

Can this cabinet be placed in a garage, basement or unconditioned space?

A: Yes — this is one of the Ermitage's real differentiators. Unlike most wine coolers that only cool, the Ermitage has an integrated heating element that allows it to maintain cellar temperatures in ambient environments ranging from 32°F to 95°F. That means a cold garage in winter or a warm unconditioned basement in summer won't push it outside its operating range. The 4.5cm high-density foam insulation supports that thermal stability throughout the year.

What is the actual bottle capacity, and how does the shelf configuration work?

A: As configured at purchase, the cabinet holds 215 bottles using 3 rolling shelves (12 bottles each) and 3 fixed storage shelves (up to 77 bottles each). The rolling shelves use low-profile grooves designed to accommodate non-standard bottle shapes — Burgundy, Champagne and larger-format bottles included. You can add rolling shelves up to a maximum of 14 total (or 9 rolling when keeping all 3 fixed shelves in place), though total capacity decreases as more rolling shelves are added. Shelf height is adjustable.

What are the electrical requirements, and does it need a dedicated circuit?

A: The Ermitage #7708 runs on 120V / 60Hz and requires a dedicated 15-Amp circuit. It cannot share a circuit with other appliances. If you're installing in a finished basement or remodeled room without a dedicated outlet nearby, you'll need an electrician to run one before delivery. Double-cabinet Transtherm models require two separate 15-Amp circuits, but this single unit only needs one.

What does the warranty cover and for how long?

A: The Ermitage #7708 carries a 1-year limited warranty covering parts and labor, plus a separate 5-year limited warranty on the compressor. The extended compressor coverage matters on a cabinet in this price tier because compressor replacement is the most expensive service event — having five years of protection on that component specifically is meaningful for long-term ownership confidence.

Everything good so far

Staff was very helpful in scheduling delivery. Despite threat of additional cost to bring the Transtherm Ermitage into the house, past the threshold, no additional charge was made. Unit arrived in good shape, and set up to run. Have only been running the unit a week as I load it up, but it seems to be functioning well. Bought unit to replace aging Eurocave. Transtherm is owned by Eurocave, and it is amazing how similar the two units are, even down to the shelving..

Issues with Shipping but satisfied overall

It took at least 2 weeks longer than expected for me to receive my cellar including the time from when I placed my order until it shipped. There was as also an additional shipping charge that I was unaware of and the shipper didnt provide a 24 hour notice when they changed my delivery time. I asked for assistance and IWA worked with me to resolve everything except the changed delivery time. They provided good customer service overall. My cellar arrived in perfect condition and it holds the set temperature accurately. It's well designed, quiet and it holds my larger burgundy and pinot bottles without issues. I would buy a Transtherm cellar again.
