Transtherm Double Ermitage Solid Door Black #7729
When a collection has grown past 200 bottles and spans both long-aging reds and whites that need to be ready at the table, a single-zone cabinet stops making sense. The Transtherm Double Ermitage puts two fully independent Ermitage cabinets side by side in a single freestanding unit — each with its own compressor, its own digital thermostat and its own temperature zone running anywhere from 43 to 64°F. One side can be set for long-term cellaring at 55°F while the other holds whites and Champagne at serving temperature, with no compromise between the two. Made in France by Eurocave, it holds 430 bottles in its standard configuration and operates silently at 37 dBA, making it a realistic option for a dining room or finished basement rather than just a utility space.
The engineering here goes well beyond basic cooling. Transtherm’s thermal pump — a proprietary system — recycles condensation and holds humidity between 55% and 80%, which matters for corks over a long aging horizon. The compressors are mechanically decoupled from the cabinet body to eliminate vibration. An integrated heating element means the unit can operate in unconditioned environments from 32 to 95°F, so it works in a garage, a lakehouse or an unfinished cellar without added infrastructure. Temperature variation inside each cabinet is held to a maximum of 2–3°F. Two dedicated 15-amp circuits are required — one per side.
Best For
- Splitting a 400+ bottle cellar between long-term aging and near-term serving without managing two separate units
- Placing high-capacity storage in a finished basement, dining room or second home where noise and vibration control matter
- Collections that include both Bordeaux and whites requiring different storage temperatures simultaneously
- Situations where ambient temperature swings seasonally — unconditioned spaces included — and a heating element is needed alongside cooling
- Dual independent temperature zones with ±2–3°F precision: Each cabinet half runs its own thermostat, so you can hold one side at long-term cellaring temps and the other at serving temperature simultaneously. The electronic regulation system keeps internal swings to a maximum of 2–3°F.
- Heating circuit rated for unconditioned spaces: Unlike cooling-only units, the integrated heater lets the cabinet operate in ambient environments from 32 to 95°F. Unheated garages, basements and second-home locations are viable placements without additional climate control.
- Compressors mechanically decoupled from the cabinet body: The slow, balanced compressors are physically disassociated from the outer structure, so vibration is not transmitted to the bottles — a meaningful difference for long-term cellaring of Bordeaux and Burgundy where sediment disturbance matters.
- Thermal pump humidity management (Transtherm exclusive): Rather than passively venting condensation, the thermal pump recycles it to hold relative humidity between 55%–80% RH. Water can also be added manually to raise humidity in dry environments.
- Aluminum interior lining: The inner walls have been upgraded from thermoformed polystyrene to aluminum, improving thermal consistency and durability across the interior surfaces.
- 4.5cm high-density expanded foam insulation: Thicker than what most comparable cabinets use, which reduces thermal load on the compressor and helps maintain stable temps when the ambient environment fluctuates.
- Silent operation rated at 37 dBA — comparable to a library at rest, relevant if the unit is placed in a dining room or living space.
- Full alarm suite covers open door, temperature deviation, humidity level and sensor fault; indicators for both hot and cold circuits are visible on the control panel.
Pairs Well With
- Additional Transtherm rolling shelves — each side supports up to 14 rolling shelves total (9 maximum when 3 fixed shelves are in place), and capacity configuration can be adjusted as the collection grows.

What These Specs Mean
- Requires 2 x 15-Amp Dedicated Circuits: Because this is a double-cabinet unit with two independent compressor systems, each side draws power on its own circuit — the two circuits cannot be shared with other appliances, and an electrician may need to run dedicated lines to the installation location if they are not already in place.
- 120V / 60Hz: Standard North American household current; no step-down transformer or special outlet type is required, but each of the two required circuits must be a dedicated 15-amp breaker.
Is the Transtherm Double Ermitage freestanding or can it be built in?
A: The Double Ermitage is a freestanding unit only. It requires 4 inches of clearance behind the cabinet for ventilation. It cannot be recessed into cabinetry or used in an undercounter built-in application. At 53½” wide x 27¼” deep x 72” tall and 504 lbs, placement planning — including the path to the final location — is worth confirming before delivery.
What are the electrical requirements, and can both sides share one circuit?
A: No — each of the two cabinet sections requires its own dedicated 15-amp circuit. The unit runs on 120V / 60Hz power. You will need two separate 15-amp dedicated circuits at the installation location. If you are remodeling or finishing a space for this cabinet, plan the electrical rough-in accordingly before the unit arrives.
What temperature range does each zone maintain, and can the two sides be set independently?
A: Yes — each of the two sections has its own independent temperature zone controlled by a separate digital thermostat. Each side maintains conditions between 43°F and 64°F at 55%–80% relative humidity. This lets you run one side for long-term cellaring (around 55°F for Bordeaux or Burgundy) and the other at a slightly cooler serving temperature for whites or Champagne simultaneously. Temperature variation inside each cabinet is held to a maximum of 2–3°F.
Can this cabinet operate in an unconditioned garage, basement, or second home?
A: Yes — this is one of the defining advantages of the Transtherm Ermitage line. An integrated heating element allows the cabinet to operate in ambient environments ranging from 32°F to 95°F. Most wine cabinets can only cool; the Ermitage actively heats as well, making it suitable for unconditioned garages, seasonal homes, or spaces with wide temperature swings. The 4.5cm high-density foam insulation and thermal pump support stable internal conditions regardless of what is happening outside the cabinet.
What is the actual bottle capacity, and does it change if I add or remove shelves?
A: As configured, the Double Ermitage holds 430 bottles. Each side ships with 3 adjustable rolling shelves (12 bottles each) and 3 fixed storage shelves (up to 77 bottles each). Rolling shelves can be added up to a maximum of 14 per side, though total capacity decreases as more rolling shelves replace fixed storage. When using 3 fixed shelves, up to 9 rolling shelves per side can be installed. The low-profile groove design accommodates all standard bottle sizes including larger-format Burgundy and Champagne bottles.
How loud is the Double Ermitage, and what keeps it vibration-free?
A: The cabinet operates at 37 dBA — roughly the level of a quiet library — making it livable in a dining room, study, or open living space. Vibration is minimized through slow, balanced compressors that are mechanically decoupled from the cabinet body, so there is no motor hum transmitted into the structure. For long-term cellaring of age-worthy wines (Bordeaux, Barolo, fine Burgundy), vibration control matters; the Transtherm design directly addresses this rather than treating it as a secondary consideration.

Good while they last
Bought the Transtherm Prestige Double Ermitage 12 years ago. One unit died two years ago and the second unit just died. Neither were serviceable. Meanwhile our Eurocave is 22 years old and going strong. Very nice units, but don't expect great longevity.
