Details

When the table is set and the main course arrives, these knives from Le Thiers do exactly what they should — cut cleanly, feel substantial in hand and look like they belong there. Made in Thiers, France by Claude Dozorme, the set is built from a single piece of X50CrMoV15 carbon stainless steel, blade through handle, with a mirror-polished finish that reads as quietly refined rather than flashy. The beechwood presentation box they arrive in makes them just as easy to give as they are to keep.

Best For

  • Setting a dinner table for six when you want the knives to hold their own against good wine and good food without drawing attention to themselves
  • Gifting to a host who entertains seriously and will actually notice the difference between a knife that holds an edge and one that doesn't
  • Reaching for night after night knowing they can go in the dishwasher and come out looking exactly as they went in

Features

  • One-piece construction: Blade and handle are forged from a single length of steel with no seam where the two meet — nothing to loosen, crack or trap food over years of use.
  • X50CrMoV15 steel throughout: Both blade and handle are made from this high-carbon stainless alloy, which holds a sharp edge significantly longer than standard stainless and resists corrosion even through repeated washing.
  • 2mm spine: Noticeably heftier than most table knives, which translates to a solid feel in hand and a blade that flexes less under pressure.
  • All-mirror-polished stainless finish — blade and handle read as one continuous piece on the table, with no contrasting material to age or discolor differently.
  • Made in Thiers, France by Claude Dozorme, a maker operating in the French knife-making capital since 1902.
  • Dishwasher safe, with a placement note: Lay flat on a horizontal rack rather than standing upright in a basket to protect the edge and avoid contact damage between knives.
  • Arrives in a beechwood box with brass hardware and a branded interior tray — no additional gift wrap needed.

FAQs

Are these steak knives dishwasher safe?

A: Yes, the Le Thiers stainless steak knives are dishwasher safe. If you run them in the dishwasher, place them horizontally on a rack — never upright in a cutlery basket. For hand washing, rinse under hot running water, use a mild dish soap with a soft sponge and dry immediately after rinsing. Either method keeps the blades and handles in good condition over years of use.

What exactly comes in the set?

A: The set includes 6 steak knives, each made with a full stainless steel one-piece construction, presented in a beechwood gift box with a brass clasp. The box is made by Claude Dozorme and is gift-ready as shipped — no additional wrapping needed.

What steel are the blades made from, and will they hold an edge?

A: The blades are forged from X50CrMoV15 carbon stainless steel, a high-chromium alloy widely used in professional cutlery for its combination of edge retention, corrosion resistance and ease of maintenance. The 2mm steel spine adds rigidity, so these knives cut cleanly through steak, poultry and firm protein without flexing.

What does “one-piece construction” mean for a steak knife?

A: It means the blade and handle are formed from a single continuous piece of steel — there are no rivets, no separate handle scales and no seams where food debris can collect. Beyond hygiene, it gives each knife a noticeably solid, balanced feel in the hand and eliminates the most common point of failure in lesser sets where handles loosen over time.

Where are these knives made, and who makes them?

A: These knives are made in Le Thiers, France by Claude Dozorme, a cutlery house based in the Thiers region since 1902. Thiers is France’s historic knife-making capital, responsible for the majority of French cutlery production. The Claude Dozorme mark on the beechwood box confirms authentic French manufacture.

How does this set compare to a Laguiole steak knife set?

A: Both traditions come from French cutlery culture, but Le Thiers knives by Claude Dozorme use a full one-piece stainless construction with no handle inserts, giving them a more streamlined, contemporary look compared to classic Laguiole designs that typically feature decorative bolsters and separate handle materials like horn or olivewood. If you want a set that reads as refined and modern rather than rustic, the all-stainless Le Thiers is the cleaner choice — and the uniform steel handles mean there are no material inconsistencies across the six knives over time.

Expensive but worth it

These knives are incredible. They are perfectly finished and the blades are so firm and sharp, they slice through everything like a Ginsu knife. I wish they weren’t so expensive but these truly are amazing if you can afford them.
