Choosing the right cooling technology is the most critical decision you will make when setting up wine storage. Forced-air systems use fans that blow air across cold compressor coils; they distribute temperature evenly and are easily accessible for repairs but can be loud when the fans are running.
Cold-wall technology uses refrigerant tubes to create a surface that radiates; it can be unreliable, cause condensation and is difficult to repair, but the system is much quieter. Since wine cellars rely on stable temperature and humidity, a forced-air system is best, but for a wine cabinet placed inside living areas, cold-wall is a viable choice.
Forced-air Cooling Systems
These self-enclosed units are typically mounted at the top of a wine cabinet and feature powerful fans that blow air across cold evaporator coils that distribute it evenly throughout the space. Forced-air systems operate much like a high-end central air conditioner but are specifically calibrated for the delicate needs of wine. Because the air is constantly moving, these systems prevent "hot spots" and ensure that the bottle at the bottom of your rack is the same temperature as the one at the top.
Premium wine cabinets utilize forced-air technology because they offer superior control over humidity and are easier to repair, since the units are self-contained and accessible. However, forced-air systems are louder than cold-wall cooling systems when the fans are "on", because the fans play a major role in creating and maintaining even temperatures throughout the cellar.
Cold-wall Technology
Often integrated directly into the structure of a wine cabinet or cellar wall; this method is exceptionally quiet because it lacks fan noise. It relies on refrigerant tubes that run behind the interior lining to create a cold surface, which radiates cooling through natural convection. Cold-wall systems often struggle with temperature stratification, meaning the air near the "cold wall" is significantly chillier than the air on the opposite side of the cabinet.
Because the cooling is concentrated on a single surface, it can cause excessive condensation that strips essential humidity from the air, potentially drying out your corks. Another disadvantage of cold-wall systems is that, because they are integrated into the walls of the wine cellar, they cannot be swapped easily and are expensive to repair.
