The phrase custom wine cellars is sometimes used to describe a wide range of wine storage solutions, including freestanding wine coolers, wine cabinets, converted closets, basement room conversions, and even underground caves. In the broadest sense, wine cellars whether custom or not, are just places where wine is stored and more importantly, properly aged.
Perfect conditions for wine storage - and hence, perfect wine cellars - include consistent temperatures ranging from 55°F to 60°F, relative humidity ranging from 50 to 70%, along with the absence of light, vibration and disturbances. (For more detail, see our wine storage tips page.) These conditions though, rarely occur naturally in most modern homes.
In order to achieve ideal wine cellar conditions, some people try to use 'passive' refrigeration, usually in their basement wine rooms. They rely upon the tendency of their 'below ground wine room' to remain cooler in the summer and not so cold in the winter. While it is true that below ground wine cellars tend to fluctuate less than other rooms, in most homes the temperature still tends to fluctuate much more through day, night and seasonal cycles than most people realize.
Without some kind of wine cellar climate control system in place this means that wine cellar conditions fluctuate with the ambient environment in and outside the home. This is far from the ideal environment for the proper aging of wine. This fluctuation can, if it happens over an extended period, actually spoil valuable wines. Unless your wine storage room does, somehow, naturally constantly maintain ideal wine storage conditions, you will need, like most wine cellar owners, to make use of an 'active' wine cellar refrigeration system designed to control and stabilize the temperature and ideally, also the humidity.
When building a custom wine cellar with an active wine cellar refrigeration system, it is critically important to properly construct your wine cellar with the right kind of vapor barriers and quality insulation. A vapor barrier and an airtight seal in the room will reduce, if not eliminate excess condensation naturally caused by wine cellar cooling units.
This will help reduce the likelihood of mold in the walls. Quality insulation, with the highest R-Value you can afford, will reduce the size of the wine cellar cooling unit required to maintain proper wine storage conditions in your wine cellar. It will also reduce the cost of running the cooling unit and potentially increase its lifespan, as it will not need to run so much over time.
After your custom wine cellar's walls are constructed, and your wine racks are in place, it's also important to install the right kind of wine cellar doors and lighting. Custom wine cellar doors for example are usually purpose built to properly seal the room and not warp as they maintain the cooler more humid environment in your wine cellar. Lighting in your wine cellar also needs to be of a special type that does not emit unnecessary heat into the room.
